Spinach quiche

vegetarian / prep time 10 minutes / bake time 30 minutes

This no crust cheese spinach quiche is a perfect savory addition to your breakfast /brunch table, or even a meal as its own. It’s loaded with cheeses and spinach, is very simple and quick to make. All you have to do is cook or sauté the spinach. Mix all the ingredients together and pop it into the oven. Drool while the smell of the melting cheeses fills up the house. 30 min later you got a great dish.

Story time

I adopted this recipe from my mother in law. The truth is, before I met my husband (with 23) I wasn’t even aware of this kind of dishes. I don’t come from a very foodie family (well obviously this isn’t the case now, lol). But back in the day, most of the Turkish and Bulgarian kitchen were not familiar to me.

Long story short, my mother in law, Dalia, is an excellent cook. And I learned a lot from her. This quiche has always been part of Friday night’s dinner table, when the whole family sits together. I gave it my own interpretation over time and adapted it to my home and loved ones taste. I love making it for a weekend brunch table, or even in the middle of the week.

Ingredients – for 1 round baking dish 20 cm / 7.9 inch diameter

Oil to coat the baking dish

250 gr / 9 oz no fat Greek yogurt

1 large egg

75 gr / 3 oz crumbled feta cheese

100 gr / 4 oz grated yellow cheese

100 gr / 4 oz spinach

2 tbs flour

Salt & pepper to taste

Goat cheese for the topping (optional)

Method

Preheat the oven to 180 degrees Celsius/ 350 Fahrenheit.

Fill a pot with water, bring to boil. Lower the heat and insert the spinach. Cook for 1-2 min. drain the water and set to cool. Squeeze the fluids out of the leaves with your hand.

In a large mixing bowl mix together the egg, Greek yogurt, feta, cheese, flour, salt and pepper. Combine well. Add the spinach and mix again.

Coat the baking dish with a bit of oil. Pour in the mixture. Top with goat cheese (optional). Bake for about 30 min, until golden brown and firm.


I love to serve it with some cream cheese and a fresh cut salad on the side.
