Roasted cherry tomato salad

Need a side salad. Try this roasted cherry tomatoes salad. It’s a perfect addition to any meal, whether a cooked dinner, lunch, a BBQ, a lavish brunch, or even a topping to a slice of bread with a cream cheese spread or hummus. It is made from roasted and fresh cherry tomatoes, mixed in their own juice, that came out from roasting. So, no need for any dressing (less work, hehe).

I make it when I want something different than the usual fresh veggies on the table. It is also a great way to add a red colour splash to any meal and dining table, and since we eat first with the eyes this is definitely something to consider.

It is an easy add, you don’t need many ingredients, only some cherry tomatoes and a spare 25 min. It takes less than 5 min to prep. And another 20 min to roast (your coffee break), that’s it. So, no excuses, go make it, you won’t regret it, promise.

I made this salad in advance for a little BBQ we had the other day, but it never really made it to the table. It was gone while still on the kitchen counter. So be warned, if you have a bite, you will probably find yourself eating it all, LOL.

Ingredients for 1 small salad

500gr / 1lb 2oz cherry tomatoes

1 garlic head

2 sage branches

1 green chili

2 tbs Coarse salt

3-4 tbs olive oil

50 gr feta cheese

Method

Preheat the oven on 230 degrees Celsius 450 Fahrenheit upper heat.

Line a baking tray with a baking sheet. Put half the cherry tomatoes in the baking tray. Cut the spicy pepper in 2. Add to the tray. Cut the garlic head so that the cloves are all cut and spread them out a bit. Add to the tray. Add the sage. Drizzle with olive oil and sprinkle with salt. Roast for about 20 min, until the tomatoes have popped out of their skin.

Meanwhile cut the rest of the cherry tomatoes in 2. Put them in a bowl.

Once roasted add to the bowl: the roasted tomatoes, 5 peeled garlic cloves, a bit of the pepper (it is spicy so to your taste). Pour in all the juice from the baking sheet. Sprinkle with feta cheese and mix.
