Quick all in one Fried Egg Bagel

vegetarian / prep time 5 minutes / cook time 6-8 minutes

This bagel comes out super moist and soft, it literally melts in your mouth. It’s a full meal in one dish. You got your carbs fats and proteins all in one quick 10 minutes prep and cooking time. All you need for it are simple everyday ingredients: eggs, milk, and a bagel (it can also be done in a holed bread slice if there are no bagels around).  Simple and satisfying. This one is a winner in my family as everybody likes it.

It is a great breakfast or dinner go to option, and if you want you can make it fancier by sautéing some veggies with it. But I kept it clean (kids’ friendly version, you know).

Story time

I’m writing these lines 3.5 weeks into quarantine. 3.5 weeks of spending hours in the kitchen feeding my constantly hungry kids. 3.5 weeks in which the poor fridge door is working overtime, my coffee cup is being constantly refilled to keep me sane (thank god for coffee),the house looks like a constant mess even immediately after cleaning the hell out of it,  and nobody knows how much longer it will take.

In all of that I had to come up with new ways to keep my hungry gang satiated and satisfied, quick yet interesting and fun eats. This fried egg bagel is definitely a winner, as it takes less than 5 minutes to prep (and  another 6-8 min cooking time) it includes simple ingredients, its super easy and simple and the best part all the kids like it, so it is a huge win win situation for both sides. Ingredients for 4 egg bagels

2 bagels (sweet of possible)

4 eggs

1.5 cup milk of your choice

1 tsp butter for frying

Feta cheese (optional) for the topping

Salt and black pepper to taste

Method

Pour the milk into a wide bowl or plate. Cut the bagels in 2 (in a way that you get 2 pieces with the hole in the centre). Soak each bagel piece in milk.

Heat up a non-stick skillet and add the butter. Once melted add the bagels in, cut side facing down.  

Break open 1 egg into each bagel hole. Season with salt and sprinkle with feta cheese to taste.

Turn down the heat to medium low and cover the pan with a lid. Simmer for about 6-8 min until the egg is fried to your liking. Season with pepper and serve.


Serve warm with a fresh cut salad on the side.
